Medium-grain rice

A variety of medium-grain white rice, of Greek origin, from crops grown mainly in the regions of Phthiotis, Aetolia-Acarnania, and Thessaloniki. As its grains tend to stick together while being cooked, it is ideal for soups and desserts, such as rice pudding.
